Day 1

Well, day 1 is in the books.  It went pretty well considering we didn’t plan very well for our first week! No big grocery shopping trip, no meal plan. We had plans to do so, of course, but life got in the way 🙂

Here is the recap of what we had yesterday:

Breakfast – Cereal and coffee. I had coffee from home, Delph’s co-worker bought her’s (against the rules! Delph will have to do an extra morning at the end of the challenge, haha)

Lunch/Snacks – Ham and cheese wraps, carrot sticks, apples

Dinner – Grilled chicken with caramelized onions, and brussels sprouts

Dessert – Delph had a mini magnum chocolate bar

Today’s plan was more of the same, finding food from the fridge for most of the meals. I do have plans to make some yummy tomato soup for dinner tonight, and luckily already have the fixings for grilled cheese! Fall is definitely here 🙂
