Day 9

It’s already Thursday! This week is getting away from me ! I won’t complain though, because it is almost the weekend – one more day🙂

Back to Tuesday’s meals…I tried one of the recipes in my recipe round-up for dinner!

Breakfast: Cereal, toast, coffee

Lunch: Ham and cheese, tomato soup with croutons

Snacks: Apples, carrots and hummus

Dinner: Spicy Sausage pasta! Delph and I both enjoyed this dish! It was different, spicy, and cooked up in one pan – gotta love that! I think the only thing I would change is that I’d probably take it off the stove a few minutes early and bake it a little, and then broil it. This would probably require transfer to a baking dish, but I think I can handle the extra dish😉 Oh, and I also blended the rotel to make them more saucy and less chunky🙂

Recipe Round-up!

This 30 day challenge has given us a great opportunity to try new recipes. Sometimes (ok, a lot of the time!) we get stuck in a rut making the same 3 or 4 dishes, and it gets old after a while! Here are a few recipes I’m looking forward to trying out in the next week or two:

  • Spicy Sausage Pasta – This pasta from Kevin and Amanda looks delicious and different! We have been loving pasta lately, it’s such a comfort food to us🙂 This probably won’t be the only pasta we try this month!

  • Ale and Cheddar Soup – Gotta have a soup in the recipe round-up, it is fall after all! This yummy soup from Closet Cooking seems just the thing for a cool autumn night!

  • Fresh Apple Cake – Can’t forget dessert! This cake from Iowa Girl Eats looks like a delicious way to use some of the apples we picked last weekend – and our new bundt pan from our wedding shower!

Day 8

Happy Tuesday! I have to admit, Tuesday is my least favorite day of the week…the only thing it has going for it is that it is 1 day closer to the weekend!🙂

Yesterdays meals were slightly switched up for the usual. A few new things here and there:

Breakfast – Toast with butter and cherry jam, breakfast sandwich, coffee

Lunch – Ham and cheese, carrots and hummus, tomato soup with croutons

Snacks – apples

Dinner – Chicken Parm, salad with homemade dressing

Weekend Recap! (Days 6 & 7)

We had a really fun weekend planned this past weekend. It went by way too fast! (Don’t they all though? :))

First up was Saturday. We were excited to do one of our favorite fall activities – apple picking! Before we left we had some cereal and coffee for breakfast.


We had a great time.  We didn’t go to our normal farm, but this farm had Honeycrisps, which I was happy about! We got a 10 lb bag of apples, and still have about 7 of those pounds left, so expect to see some apple recipes this week! (Apple Crisp will be up first!)

After apple picking we headed home for lunch. Earlier that morning, I had made The Novice Chef’s Creamy Tomato Soup, which is a Panera copycat recipe. It was a hit! Delicious and fresh, and definitely reminded me of Panera’s creamy tomato soup. I served it with crostini for dipping, and croutons and grated cheese as toppers. Definitely a soup to add to my recipe book! After lunch we hit up the New England Pet Expo! Holy pet overload! Toby had a great time though and we got him a few goodies along the way🙂


For dinner, we had a few friends over for taco night! Our friend Sarah mentioned how taco night is definitely one of those meals meant for a few people, so it seemed like a natural choice for our get together! We made ground turkey tacos and bulked up the meat with chopped onions and zucchini. We had all of the normal fixings – lettuce, cheese, tomatoes, guac, salsa, and refried beans. The tacos were gone in no time at all🙂

Sunday started off with a Weight Watchers Apple French Toast Casserole that Sarah made for us! It was yummy, and a great way to use leftover bread and some of the many apples we had rolling around in the kitchen. Around lunchtime we headed to Delphine’s parents house to hang out with her step-dad and watch the Patriots game (we don’t have cable. We picked up a few things at the grocery store to grill while we were there. We had quite the game day spread!


Steak tips, kielbasa, buffalo chicken strips, grilled onions, sweet potatoes, and a caprese salad. (Sorry for the not so great picture, I have been slacking on taking food pics, and had to use one that Delph quickly took!) We also had some chips and dip to snack on.

The Patriots ended up winning, so happy moods were all around🙂 We headed home after that for some Sunday night relaxation – video games and reading. We ended up having pancakes for dinner because we were craving something sweet! We also watched a few episodes of Call the Midwife. We’ve been enjoying the series and ended up finishing season 1 last night. So happy season 2 is already on Netflix!

And just like that, our weekend had come to an end. It’s back to the grind today, and onto the countdown until next weekend! We now have completed the first 7 days in our 30 day challenge, and I have to say that it wasn’t too much of a challenge this week! We were able to eat home cooked/home prepared meals all week with not too much extra effort. Hopefully that will continue as we move into the second week!

Day 5

Friday went well, and luckily went fairly quickly! Quick update of our food:

Breakfast – Cereal, coffee

Lunch – PB&J, Ham and cheese

Snacks – Carrots, cottage cheese with pineapple

Dinner – Ravioli with tomato sauce, bread

Day 3 & 4

It’s finally Friday!! Life got in the way yesterday, so I’m a little late on my recaps! Wednesday and Thursday were fairly uneventful; I plan to have much more interesting posts coming up🙂 Breakfasts and lunches were basically the same both days, dinners were different.

Breakfast – WW egg sandwich, cereal, coffee (Cool Brew, which we always have in New Orleans! We ordered some to have especially for this challenge.)

Lunch – PB & J, Ham and cheese, carrots

Snacks – Sugar free pudding

Dinner – Wed: Egg sandwiches and some leftover piergoies. Thurs: Our friends made us dinner! Spaghetti and meatballs and a yummy brussels sprouts salad…plus a pumpkin beer or two🙂

Today is more of the same, but I have some fun plans for dinner tonight and some new recipes to try this weekend. I’ll be back a little later with a post devoted to that!

Day 2

Quick recap of Day 2:

Breakfast – Raisin toast/cottage cheese with pineapple, coffee

Lunch – Leftover chicken and sausage with leftover rice and sesame dressing, carrot sticks

Snacks – Chocolate🙂

Dinner – “Homemade” Chicken noodle soup aka pasta and some cut up carrots boiled in chicken broth…fast and comforting

So far we are doing a good job of using what is already in our fridge. We did do a light shopping last night, but we plan to keep coming up with meals from items already in the fridge. Thinking egg sandwiches for dinner tonight🙂
